I not too long ago visited a neighborhood low cost grocery retailer to purchase greens for my chickens and located some beautiful butternut squash on sale. In fact, being a binge purchaser for a very good sale, I purchased three of them after which spent a while deciding how greatest to make use of them. In fact, I needed to make a batch of our favourite squash soup, after which I used one other squash in a baked pasta dish. I made a decision to make use of the third squash as a singular facet dish.

I made a creamy whipped feta and ricotta dip beneath the squash so you’ll be able to scoop it up as you take pleasure in every chew of this tasty squash.  I take advantage of my Vitamix to create the creamiest of dips and sauces, and this dip ended up so tasty and easy, I feel that it might be scrumptious slathered on some crusty bread all by itself! A scorching honey drizzle on high to complete provides just a bit warmth, whereas toasted, chopped pistachios add some crunch.

As a result of I like so as to add contemporary herbs to each dish, I added some contemporary chopped dill from my herb backyard. Mint or parsley would work nice as properly. This dish is nice served heat or at room temperature, and supply some crusty bread to mop up each final little bit of the creamy dip!

    Buon Appetito!
